A cooking tool might seem like a funny thing to categorize as “self-care”, but for me it totally is! I struggle to get dinner on the table after a long day either at home doing lessons or running around to extracurricular activities. My instant pot has made it so that I can easily get dinner on the table even after one of those long days.
My favorite thing to make are shredded chicken tacos, and it’s so easy that I’ll share the recipe here!
1-2 lbs fresh or frozen (!) boneless skinless chicken pieces (thighs or breasts work best)
1 cup tomatillo salsa (Herdez brand from Target is my favorite!)
1 packet of taco seasoning
juice from 1 lime
Directions: Put it all in the instant pot and stir it up a little, then set it to cook at high pressure for 20 minutes if using fresh chicken, 25 for frozen. It takes about 10 minutes to get to pressure, so all in all it’s about 30-35 minutes. Once it’s done, either let it release naturally or do a quick release. Shred the chicken and serve on tortillas with your favorite taco toppings!
